Behind the double doors

The full time job I had before this restaurant seemed like work. I saw my employees more than my own family, my office more than my house.. you get the idea. I remember thinking, once I have a restaurant, I can get some days off!! Not so much. Today is the second day I have ever taken a day off from the restaurant, and only because I have 4 cakes that MUST be done today.. one of which is for my best friends bridal shower. Its hard to find a balance right now. All of the things I thought I'd have time for, I have to constantly say no to because Im either working or too tired to go. This place is not just about flipping pancakes. Its about meetings, bills, marketing, managing, staffing, WORKING, baking, cooking, maintaining, cleaning, and guests.
Im lucky to have the friends that I have.. most of whom I only see when they come to eat breakfast or lunch. I look forward to the 5 or 10 minutes I can sit and talk and forget about my never ending to-do list. The last two weeks have been especially crazy. After we got featured in the LVRJ, business changed dramatically. We are all short on sleep, short on nerves, and short on patience, but we pull it together. Just dont go behind the double doors!!

I thought I knew...

I really thought I knew what I was in for when we got this place.. and oh my god.. was I wrong. I realized it wouldnt be just flipping pancakes and smiling all day, but even still, the amount of work it takes to make this place work from open to close and even after that is insane. I decided to start a blog to share everything I have learned and still have to learn about this business and this industry. This way, all of my poor friends who dont want to hear about it anymore wont have to.. I know you guys get sick of it!!  I'll be posting pictures, telling stories, good AND bad just to keep it real, and hopefully I will keep learning as much I have thus far. To be fair.. Im going to start from the beginning... just in case you werent listening the first 10 times I told the story ;)
